Maja Blanca Recipe ~ Mga Pagkaing Pang Pinoy

Maja Blanca
Ingredients

  • 4 cups coconut milk
  • 3/4 cup cornstarch
  • 14 ounces condensed milk
  • 3/4 cup fresh milk
  • 3/4 cup granulated sugar
  • 15 ounces whole sweet kernel corn
  • 5 tbsp toasted grated coconut

Cooking Procedure

  1. Pour the coconut milk in a cooking pot and bring to a boil.
  2. Add the sugar, condensed milk, and whole sweet kernel corn then stir until all the ingredients are evenly distributed.
  3. Simmer for 8 minutes
  4. Combine the fresh milk and cornstarch then whisk until the cornstarch is diluted
  5. Pour the fresh milk and cornstarch mixture in the cooking pot and stir thoroughly.
  6. Allow to cook while stirring until the mixture reaches your desired thickness
  7. Pour the mixture in a serving tray then arrange and flatten the top using a flat tool such as a wooden spatula
  8. Allow to cool down then refrigerate for at least 1 hour
  9. Garnish with toasted grated coconut (or latik if available)
  10. Serve cold. Share and enjoy!

Cassava Cake Recipe ~ Mga Pagkaing Pang Pinoy

 Cassava Cake

Ingredients

Batter:
  • 2 packs grated cassava (about 2 lbs total weight)
  • 1 can coconut milk
  • ½ can evaporated milk
  • 2 pieces raw egg
  • ¼ cup butter, melted
  • 6 tbsp cheese, grated
  • ½ cup condensed milk
  • 14 tbsp sugar
Topping:
  • 1 can coconut milk
  • 2 tbsp sugar
  • ½ cup condensed milk
  • 2 tbsp flour
  • 2 tbsp cheese, grated
  • 1 piece raw egg
 

Cooking Procedure

  1. Combine the grated cassava, butter, condensed milk, evaporated milk, cheese, sugar, and eggs in a mixing bowl and mix thoroughly
  2. Add the coconut milk in the mixing bowl where the mixed ingredients are. Mix again.
  3. Grease the baking tray then pour-in the batter (ingredients that has just been mixed)
  4. Pre -heat oven for 350 degrees Fahrenheit for 10 minutes then put-in the baking tray with batter and bake for 1 hour.Remove from the oven and set aside.
  5. Meanwhile prepare the batter by combining the sugar and flour and put-in the heated saucepan.
  6. Pour-in the condensed milk then mix thouroughly.
  7. Add the cheese while stirring constantly.
  8. Pour the coconut milk and stir constantly for 10 minutes
  9. Pour the topping over the Cassava Cake (baked batter) and spread evenly.
  10. Separate the yolk from the egg white of the remaining egg (we’ll be needing the egg white)
  11. Glaze the topping with the egg white (you may use a basting brush for this step)
  12. Broil the Cassava cake until color turns light brown.
  13. Garnish with grated cheese and serve. Share and enjoy!

Ginataang Alimasag Recipe ~ Mga Pagkaing Pang Pinoy

 Ginataang Alimasag

Ingredients

  • 3 lbs crabs (Alimasag)
  • 2 tbsp shrimp paste
  • 1 tbsp fish sauce
  • 1 tsp garlic, minced
  • 1 medium-sized onion, minced
  • 1 knob ginger, cut into thin strips
  • 3 tbsp cooking oil
  • 4 cups coconut milk
  • ½ tsp ground black pepper
  • 1 bunch fresh spinach
  • 6 pieces chili

Cooking Procedure

  1. In a large pot, sauté the garlic, onion, and ginger
  2. Add the ground black pepper and coconut milk then bring to a boil
  3. Put-in the shrimp paste and fish sauce and cook until the coconut milk’s texture is thick and natural oil comes out of it (approximately 20 ++ minutes)
  4. Add the chili and simmer for 5 minutes
  5. Put the crabs in the pot and mix until evenly covered with coconut milk. Simmer for 5 to 20 minutes. (Note: If crabs were steamed prior to cooking, 5 to 8 minutes is enough)
  6. Add the spinach and simmer for 5 minutes
  7. Serve hot. Share and Enjoy!


Ginataang Langka with Daing Recipe ~ Mga Pagkaing Pang Pinoy

 
Ginataang Langka with Daing

 

Ingredients

  • 1 lb unripe jackfruit; peeled and chopped
  • 1 large onion, diced
  • 1 piece shrimp cube
  • 5 cloves crushed garlic
  • 3/4 cup tomatoes, diced
  • 3 to 5 pieces red chilies
  • 3 cups coconut milk
  • 3/4 cup water
  • 1/2 cup fried dried fish (daing), bones removed

Cooking Procedure

  1. Heat a wok or a cooking pot and pour-in the coconut milk. Bring to a boil.
  2. Add the garlic and onions and cook for 3 to 5 minutes while continuously stirring the mixture.
  3. Put-in the tomatoes and red chilies. Continue stirring to prevent lumps from forming.
  4. Add the fried dried fish and cook for 5 minutes.
  5. Pour-in water and allow re-boiling.
  6. Add the chopped jackfruit then mix with the other ingredients. Simmer for 5 to 8 minutes.
  7. Put-in the shrimp cube then stir to ensure that the ingredients are properly distributed. Simmer until the liquid dries up.
  8. Transfer to a serving plate then serve.
  9. Share and enjoy!

Sinigang na Bangus sa Miso Recipe ~ Mga Pagkaing Pang Pinoy

Sinigang na Bangus sa Miso

Ingredients

  • 1 to 2 lbs milkfish, cleaned and sliced
  • 1 bunch mustard leaves
  • 3 medium tomatoes, quartered
  • 1 pack (1.4 ounces) tamarind soup mix
  • 2 1/2 tablespoons fish sauce
  • 2 pieces long green chilis (siling pansigang)
  • 1/2 cup white or yellow miso (soybean paste)
  • 1 medium yellow onion, sliced
  • 2 tablespoons cooking oil
  • 6 cups water


Cooking Procedure

  1. Heat a cooking pot and then pour-in cooking oil.
  2. Put the onions in when the oil becomes hot, and then saute for 2 minutes.
  3. Add the miso and cook for another 2 minutes.
  4. Put-in the fish sauce and water, and then stir. Bring to a boil.
  5. Add the tomatoes and tamarind soup mix. Cook for 5 minutes.
  6. Put-in the long green chilis and milk fish. Cook for 15 to 18 minutes in low heat.
  7. Finally, add the mustard leaves and turn off the heat. Cover the pot and let the residual heat cook the greens.
  8. Transfer to a serving bowl, and then serve.
  9. Share and enjoy!

Beef Caldereta Recipe ~ Mga Pagkaing Pang Pinoy


Beef Caldereta

Ingredients

  • 2 lbs beef, cubed
  • 3 garlic cloves, crushed and chopped
  • 1 onion, finely chopped
  • 4 cups water
  • 1 cup red bell pepper, cut into strips
  • 1 cup tomato sauce
  • 1/2 cup liver spread or liver paste (processed using blender)
  • 1 tsp. crushed chili
  • 3 large bay leaves
  • 2 cups potatoes, sliced
  • 2 cups carrots, sliced
  • 1 cup cooking oil
  • 2/3 cup green olives
  • salt and pepper to taste

Cooking Procedure

  1. Heat the cooking oil in the pan and fry the carrots and potatoes until color turns light brown
  2. Remove the fried carrots and potatoes from the pan and set aside
  3. In the same pan where the vegetables were fried, sauté the garlic and onions
  4. Add the beef and simmer for 5 minutes
  5. Add water and let the beef boil until tender (about 30 mins if using pressure cooker or 1 to 2 hours if using an ordinary pot)
  6. Add the tomato sauce and liver spread and simmer for 10 minutes
  7. Add green olives, carrots, bay leaves, bell pepper,crushed chili,and potatoes and simmer for 5 to 8 minutes
  8. Add salt and pepper to taste
  9. Serve Hot. Enjoy!

Chicken Tinola Recipe ~ Mga Pagkaing Pang Pinoy


Chicken Tinola

Ingredients

  • 1 lb. boneless chicken breast, chopped
  • 5 cups chicken broth or stock
  • 3 pieces chayote, peeled, seed removed, and sliced into wedges
  • 2 tablespoons ginger, sliced into thin strips
  • 2 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 cups Spinach
  • 1/2 teaspoon ground black pepper
  • Fish sauce to taste
  • 2 tablespoons cooking oil

Cooking Procedure

  1. Heat the cooking oil in a cooking pot.
  2. When the oil becomes hot, sauté the ginger, garlic and onion
  3. Once the onion is soft, put-in the chopped chicken. Cook for 3 minutes.
  4. Pour-in the chicken broth. Let boil and then simmer for 20 to 25 minutes.
  5. Add the chayote wedges. Cook for 5 minutes.
  6. Put-in the hot pepper and/or malunggay leaves.
  7. Add the ground black pepper and fish sauce. Stir.
  8. Transfer to a serving bowl.
  9. Serve. Share and enjoy!

Pork Menudo Recipe ~ Mga Pagkaing Pang Pinoy


Pork Menudo

Ingredients

  • 2 lbs pork
  • 1/2 lb pig’s liver
  • 1 cup carrots, diced
  • 1 cup potatoes, diced
  • 1/2 cup soy sauce
  • 1/2 piece lemon
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon sugar
  • 3/4 cup tomato sauce
  • 1 cup water
  • 4 pieces hotdogs, sliced diagonally
  • 2 tablespoons cooking oil
  • 2 to 3 pieces dried bay leaves
  • salt and pepper to taste

Cooking Procedure

  1. Combine pork, soysauce, and lemon in a bowl. Marinate for at least 1 hour.
  2. Heat oil in a pan
  3. Saute garlic and onion.
  4. Add the marinated pork. Cook for 5 to 7 minutes.
  5. Pour in tomato sauce and water and then add the bay leaves.Let boil and simmer for 30 minutes to an hour depending on the toughness of the pork. Note: Add water as necessary.
  6. Add-in the liver and hot dogs.Cook for 5 minutes.
  7. Put-in potatoes, carrots, sugar,salt, and pepper. Stir and cook for 8 to 12 minutes.
  8. Serve. Share and enjoy!

Pork Adobo Recipe ~ Mga Pagkaing Pang Pinoy


Pork Adobo

Ingredients

  • 2 lbs pork belly
  • 2 tbsp garlic, minced or crushed
  • 5 pieces dried bay leaves
  • 4 tbsp vinegar
  • 1 cup soy sauce
  • 1 tbsp whole pepper corn
  • 1 cup water
  • salt to taste

Cooking Procedure

  1. Combine the pork belly, soy sauce, and garlic then marinade for at least 1 hour
  2. Heat the pot and put-in the marinated pork belly then cook for a few minutes
  3. Add water, whole pepper corn, and dried bay leaves then bring to a boil. Simmer for 40 minutes to 1 hour
  4. Put-in the vinegar and simmer for 12 to 15 minutes
  5. Add salt to taste
  6. Serve hot. Share and enjoy!


Chicken Afritada Recipe ~ Mga Pagkaing Pang Pinoy


Chicken Afritada

Ingredients

  • 2 lbs chicken, cut into serving pieces
  • 1 large potato, quartered
  • 1 large carrot, sliced
  • 1 large bell pepper, sliced
  • 1 cup green peas
  • 8 ounces tomato sauce
  • 4 cloves garlic, minced
  • 4 pieces hotdogs, sliced
  • 1 medium onion, diced
  • 1 1/4 cups chicken broth or stock
  • 2 pieces dried bay leaves
  • 1 teaspoon granulated white sugar
  • 4 tablespoons cooking oil
  • Salt and ground black pepper to taste

Cooking Procedure

  1. Pour-in cooking oil in a cooking pot or casserole then apply heat.
  2. Pan-fry the chicken until the color turns light brown (about 3 minutes per side).
  3. Remove the chicken from the cooking pot.
  4. On the same cooking pot, sauté garlic and onions.
  5. Put-in the sliced hotdogs and pan-fried chicken then cook for a minute.
  6. Pour-in tomato sauce and chicken stock then add bay leaves. Simmer for 30 to 40 minutes.
  7. Add the potato and carrots then simmer for 7 minutes or until the vegetables are soft.
  8. Put-in the bell pepper, green peas, salt, sugar, and ground black pepper then cook for 3 minutes more.
  9. Turn-off heat then transfer to a serving plate.
  10. Serve with steamed rice. Share and enjoy!

Pork Steak Recipe ~ Mga Pagkaing Pang Pinoy



Pork Steak

Ingredients

  • 4 to 5 pieces pork chops
  • 5 tablespoons soy sauce
  • 2 pieces lime or 1 piece lemon
  • 1/2 cup cooking oil
  • 2 medium onions, sliced
  • 1 1/2 cups water
  • 1 tablespoon granulated white sugar
  • Salt and pepper to taste

Cooking Procedure

  1. Combine pork chops, soy sauce, and lime juice in a large bowl or container. Marinade for at least 1 hour.
  2. Heat a pan then pour-in cooking oil.
  3. Pan-fry the marinated pork chops in medium heat for 3 to 5 minutes per side.
  4. Remove excess oil. Pour-in the remaining marinade and water and let boil. Simmer for 45 minutes or until the pork is tender. Note: Add water as needed.
  5. Add-in the sugar, salt, and pepper then stir.
  6. Put-in the onions and cook for 3 minutes more.
  7. Turn-off heat and transfer to a serving plate.
  8. Serve. Share and enjoy!
